Yep, we sure do. Elation is the best way to describe the day. When you wait for something for so long, and anticipate it, and watch it be only almost there, the moment it finally happens is somewhat cathartic. What? what you say? Well TWO things. 1. My logo is finally complete! Take a look: I guess I should work on designing a new banner for the blog, now that I have something to coordinate. 2. Our nearly 11 month old, CK, decided to get off her but and crawl! As I told my sister Dee (she asked for a video of the happening since she lives in LA) it was not the graceful movement that you are envisioning. I think she used her head a few times to get leverage, cried intermittenly, and promptly demanded a bottle and went to bed. I guess she just needs to build up some stamina. This is a lovely pic of Dee first thing in the morning, during her last trip to the East coast. She just wanted to soak up every last moment with them before the trek home! Lastly, I made a batch of my Flourless Peanut Butter Cookies a few days ago! I wanted to test out this new Maple Sugar from Trader Joe’s. Apparently, it’s 2x as sweet as refined sugar, but much better for your metabolism. Needless to say, it didn’t last but a day or two. Verdict: it only sweetens subtly, so maybe use a little more than half of the regular for substitution. Not too maple-y at all! Flourless Peanut Butter Cookies 1 C. Peanut Butter 1/4 C. Maple Sugar, or 1/2 C. regular sugar, (even more if you want sweet cookies) 1 tsp Baking Soda 1/2 C. Oat Bran 1 Egg 1/2 tsp vanilla 1 TBS Flax 1/2 C. Chocolate Chips (optional) Preheat Oven to 350, bake for 10 mins + line sheet with parchment Mix, Bake, Eat. Note: these cookies are EXTREMELY crumbly when warm, let cool completely for easiest consumption. Or don’t.
